Pork Chops and Apples

Pork chops and apples

Drool.

Once again I must apologize for the long gap between posts! The holidays got the best of me and I fell out of the blogging routine. Not to mention that Chicago’s dim winter lighting does not lend itself to food photography…

Nonetheless, I haven’t stopped cooking (or eating). Today I’m drooling over this classic autumn-themed dish that happens to be good all year ’round: pork chops and apples. My dad made this a lot and it’s always a classic. This time, I cooked it up at my mom’s place with the help of my sister for a fun family-style meal.

Paul’s Guacamole

Paul's guacamole recipe

At long last, the infamous guacamole recipe! I feel like I keep saying that each recipe is one of the first my dad ever taught me, but this is another early fave. I remember camping out by the guac bowl whenever Dad would make this for parties (alongside his famous from-scratch salsas and doctored-up cheese dip).

Now it’s become one of my go-to party/barbecue recipes as well. It’s creamy, spicy, citrusy, and best of all—easy. See for yourself!

Sexy Spicy Thai Curry

Note: It was me who named this dish, not my dad.

Oh, yum. That’s all I can think of when someone says Thai curry. This used to be one of my dad’s staple meals, and he’d always whip up some exotic Thai sides while he was at it (the best I could manage was pad thai from a box).

The first time I made this recipe on my own, it was for 80 people. And it wasn’t exactly on my own…

Brown Sugar Salmon

Brown Sugar Salmon

This was always one of my favorite meals growing up. I remember requesting that my dad make this as a birthday meal or whenever I was home from college. It’s sweet, melt-in-your-mouth savory, and you’ll want to glug the marinade straight out of the pan.
